Making Peace with the Crock Pot

I’ll admit it.  I used to be somewhat of a “crock pot snob”.  To the old me, the idea of throwing a bunch of ingredients in to a pot and letting it sit there all day didn’t count as actual cooking.  And then I became a working mom and realized that in order for me to get a hot meal on the table before 9 pm, it would probably be in my (and my family’s) best interest if I made peace with the Rival Crock Pot that was gathering dust in the back of my cabinet.  And now, almost 4 years later, I’m proud to say that I don’t know what in the world I would do if I couldn’t chuck a bunch of delicious stuff in a pot in the morning and 10 hours later walk in the door and have a wonderful smelling wholesome dinner ready to go.  Seriously, what could be better than that??  Here are some of my favorite go to crock pot meals that never disappoint!

I made a recipe for Root Beer Pulled Pork from Along Came Baby last weekend and it was AMAZING!    It had just the right amount of sweetness to make my son ask for seconds.

My son is a big fan of ravioli so Crock Pot Pesto Ravoli from Semi Homemade Mom is a huge hit with him.

While I love to cook, I’ve never been too fond of having to cook first thing in the morning.  So I’m a huge fan of “do ahead” breakfasts like Crock Pot Blueberry French Toast from Get Crocked.  Amazing!

Mexican is a family favorite in our house.  Just Find it 4 U’s Crock Pot Creamy Chicken Tacos are super easy and delicious!

I had no idea you could make dessert in a Crock Pot!  Crock Pot Carrot Cake with Cream Cheese Frosting from Crock Pot Ladies is a real crowd pleaser. 

Don’t be scared off by the beer in this Beer and Potato Chowder recipe from Crockadoodledo!  It cooks off so it’s very kid friendly :-)

  2. Welcome to the “Crock Side” and thanks for including our recipe for Crock-Pot Carrot Cake. You MUST give this one a try. It is so moist. I am going to check out the other recipes mentioned. That blueberry French toast sounds great!
