I am NOT a baker.  I always have grand plans of creating elaborate birthday cakes for my son, but somehow I never end up having as much fun (or success!) as I imagined I would be having.  Truth be told, 90% of my cake endeavors have ended in disaster, with me swearing I will never bake again.  Yet year after year, I seem to develop a type of “baker amnesia” and set out with an ambitious plan for the birthday cake of my son’s dreams.  So I’ve been looking around for some amazing (yet, easy) DIY cakes for this year’s celebration.  Here are some of my favorites.  I’m leaning towards the truck cake.  I like that it’s supposed to look messy

Have you seen the gallery of DIY birthday cakes on Parenting.com?  If not, DEFINITELY check it out.  I love the step-by-step directions they give for each amazing cake.  I’m partial to this pirate ship cake since my son is a Jake and the Neverland Pirates super fan!

A “no bake cake” is right up my alley, especially if it involves a giant Rice Krispie treat!

Here is another one of my favorites from Modern Parents Messy Kids.  Considering most of the cakes I make end up looking like something ran it over, why not go with it and incorporate that in to the theme of the cake?

Ok, ok, I know not many kids are going to do cart wheels over a cake made of fruit, but I really liked this idea, so I wanted to include it!

LOVE this idea from Sweetpolita.  My son’s name is Ryker and when he was a baby, we used to call him Rykerdoodle.  So when I made this cake for him last year, I called it a Rainbow RykerDOODLE cake
